Vie Earns Spot on Gayot’s Top 40
U.S. Restaurants List for 2018

Chef Paul Virant’s Western Springs restaurant is one of four Chicago-area establishments to be included

Western Springs, Illinois, December 27, 2018 — Earlier this month, Gayot named Western Springs restaurant Vie to its annual list of “Top 40 Restaurants in the U.S.” Gayot has served as a guide to restaurants, hotels, travel destinations and more for 45-plus years.

To introduce its list of top restaurants, Gayot notes, “We salute these stalwart chefs across America who continually exceed expectations with their cuisine, seeking out the finest ingredients from near and far to please our palates.” Vie joins three other Chicago-area restaurants on this year’s list: Alinea, Everest and George Trois.

About Vie and Chef Paul Virant, Gayot editors write, “Chef-owner Paul Virant’s Vie is a gem of a restaurant in Western Springs, Illinois, a town that had hardly known fine dining before. … Virant comes up with some interesting and creative combinations; he's particularly touted for his innovative pickling, canning and aigre-doux techniques, which are seamlessly (and often surprisingly) incorporated into dishes that, at their root, are familiar. A great supporter of local and sustainable produce, Virant fashions fleeting delights on his ever-changing menu.”

Because of Vie’s Western Springs and suburban location, the restaurant serves as both a local favorite and a destination restaurant. Vie is located steps away from the Metra BNSF Western Springs train station.

“We are truly honored to again be included as one of Gayot’s Top 40 restaurants, among some of the most excellent Chicago company,” says Virant. “I’d like to give an enormous thank you to our hardworking team at Vie, and to our guests and community, who really can’t be beat. We are so grateful and appreciative for all their support over the years.”

Vie will celebrate 15 years in August 2019.
