Julius initially found his way into hospitality as a means to support himself as he earned his degree. During that time, he was also working hard as an All-American athlete in track & field at North Central College. He quickly found that his work ethic and determination allowed him to excel in the restaurant world just as it has in athletics. Working his way from the bottom up, he learned the business from the inside out. He found his true passion behind the bar and hasn’t looked back since. Julius has exchanged his efforts in athletics for studies of wine and spirits, including most recently earning his level 1, introductory sommelier certificate from the Guild of the Court Masters of Sommeliers.

While continuing his studies in the world of wine, it was his love of craft cocktails and capturing the essence of each season in a drink that drove him to Vie. Here, he is committed to matching the passion and love that goes into Chef Virant’s food with an exciting and constantly evolving beverage program. He is determined to create the total experience for the diner from the first sip to the very last.
